If you are entertaining and are short for time than you are going to love this dessert I whipped up on Sunday!
What you will need:
12 Sponge finger biscuits (approx 3 per serve)
1 tbsp instant coffee
1/2 cup hot water
1 shot of liquor (I used chocolate vok, you can use Frangelico, Baileys, Kahula it's up to you!)
10 Strawberries (approx)
1 1/2 cup instant vanilla custard
8 squares dark chocolate
1 square of dark chocolate
Instructions:
1. Dissolve coffee in a bowl with hot water, add liquor and stir, allow to cool.
2. While coffee/liquor is cooling dice the strawberries into 1cm cubes.
3. Divide strawberries into thirds and distribute 1/3 of the strawberries between the cocktail glasses
4. Melt 8 squares of chocolate, once melted add 1 cup of instant custard and mix till well combined.
5. Using a tablespoon, spoon approx 3 tablespoons of the chocolate custard on top of strawberries to create a second layer.
6. By this stage the coffee/liquor should have cooled down, lightly soak each sponge finger. Note: prior to soaking you may need to cut the sponge fingers in half so that they sit perfectly in your serving glass.
7. Create a third layer using the sponge fingers.
8. Repeat the layers, using 1/3 strawberries, chocolate custard and sponge fingers.
9. Pour the remaining 1/2 cup of vanilla custard amongst the glasses, top with remaining strawberries.
10. Garnish by grating 1 grate square of chocolate on top of the vanilla custard and strawberries.
11. Place in fridge till dessert is ready to be served
Serves 4, each serve was placed in a cocktail glass
